I'm assessing the restaurant a 3 out of 5 as some dishes were good while other dishes not so good. There are strict rules in Italy governing agri-tourism establishments and home grown or regionally produced foods so I'm going to acknowledge up front that spring has barely begun here and there are limits on vegetable options at this time of the year in the mountains.
Five of us had dinner on a Saturday night and although there are only a few tables it was just us. Our host was attentive and his kitchen helper who remained out of sight until the end of our evening was pretty quick as we snarfed our way through a multi course set menu. Some things were good like the first course spinach flan with goat cheese bechamel sauce but this is a common dish in Aosta Valley and not exceptional. The opening round of home made sausages or salamis were typical of the region but the boudin (blood sausage) was very good. There was a cold goose sausage served with lettuce, the only greenery on the menu, that was tasty and interesting but the whole wheat gnocchi was too dry, too thick, and too much even with the sauce. The slices of roasted meat, potatoes and sauce was too salty for my taste. Finally the cheese plate was all goat cheese, somewhat difficult to discern the difference between the creamy samples and a little sparse given that each of us was careful to cut very thin slices so as to leave some for the next. I skipped desert but others enjoyed it.
Overall I would say my windy rainy Saturday night experience would be very different from a summer day lunch for others. Les Ecureil, which translates as 'the squirrels', is high above the Aosta Valley floor on the Salassi road. The views are terrific and the venue rustic and charming.
