Wonderful Authenic Mexican Food. This is our favorite Mexican resturant around! The other ones only attempt to fix Mexican...La Caretta Rosa nails it! This is such a wonderful refreshing place to get fresh, good tasting REAL Mexican food this far north of the boarder! The Tortilla Soup is just the same as I've eaten in southern Texas and the other menu items take me there as well! Don't let the small, sometimes empty space fool you...this is a diamond in the rough! Give them a try and I guarantee you will be back again and again. Very friendly and attentive staff too...not like some other "Mexican places' in Council Bluffs!!
Good food. I think this place used to be a mens bathroom and then they converted it into a restaurant. Its currently my favorite Mexican place though. I usually get the fajitas.
Fajitas. The fajita plate is a lot of food and well worth it. The Tacos Yucatan are also good.
Mexican at the CB Courthouse. Fantastic! The prices are very reasonable, service is fast & friendly, and the food was great! Very interesting salsa for the chips, and was served with a salsa verde and roja with the meal. I found my carnitas taco to be very evocative of pulled pork bbq (NC style); I was completely blown away! The asada is good, as well. We will be back!
I got the california burrito and it is BANGIN'!!! I consider myself a burrito 'connoseuir' so to speak, and I was pleasantly pleased after deciding to leave the interstate and see what council bluffs has to offer. I am so glad I did.

Excellent. The only thing missing is a hot, mean, green chili. It would rate a 10 with that. Instead, I give it a 9.9. Very good food and friendly staff. I like being recognized when I enter a restaurant, and they do remember me. They have American- or Mexican-style tacos and guacamole. I opt for the Mexican style. Try it, you'll like it!!
Best Mexican food within a hundred miles! Order an authentic dish off the menu and expand your horizons. Also excellent salsa.
Excellent chips and salsa. Rice and beans are awesome. Pork with tomatillo sauce outstanding. Will definitely come again.

Good food, friendly staff, and good value. I'm assuming that they have reuppolstered the seating that people were complaining about because everything was in order when we were there. It looks like they are busier around lunch than in the evenings.
My hobby is eating at Mexican restaurants. My wife and I were on a road trip and spent the night in Council Bluffs. This place had the highest ratings on Google reviews so we decided to give it a try. I've got to be honest, the place is a little raggedy but the food is incredible. Really great, complex flavors. Highly recommended, just don't plan on feeling like you're at Chipotle.
Great selection and value. Deinitly not chain store Mexican food. More like what family might cook. I've tried scream dishes from enchiladas to shrimp Diablo to fajitas... All constantly good at a reasonable price. Home made chips and salsa, good guacamole.
La Carreta Rosa looks a little shabby from the outside and is not very big on the inside but the food is true Mexican and awesome if like authentic Mexican food I would recommend it.
Oh my God, how have I not found this place before?? The food is excellent. My wife had the biggest chimichunga I've ever seen. I can't remember the name if what I had but it was beyond wonderful. The complimentary chips and sala is very good, but unlike any salsa I've ever had. We will definitely be coming back.
Small old building with worn seating--six(?) booths and a few tables. However, the food is excellent (eselente comida). Great service from Felix.
Update 10 months later: My wife and I keep coming back to this restaurant whenever we are in Council Bluffs. It is by far our favorite Mexican restaurant and generally you can park right out front. I've always found the very best mexican food doesn't have to cost a bundle. That is certainly the case here.

This place is a great spot to get some real Hispanic food. It's a little hole in the wall, but isn't that where we find the best stuff?
