I had been wanting to try this bakery for years, 7 I guess. I have heard wonderful things, but did not find a reason, till my friends birthday. I am hear to say just waking up is a reason to try this bakery filled with fresh delights. They prettiest slices of cakes and "bombs", which I can only describe as cake truffles. I brought a white chocolate and lemon cream bombs and mango cake. I thought this would be great to pair with beers from Noon Whistle. The birthday girl only shared the lemon, she hoarded the rest. The lemon bomb pairs well with a kolsh and gose. I imagined that the white chocolate would have rocked with the cranberry mint saison from Noon Whistle. Run do not walk to Cakes by Carlos and celebrate life with this party for you taste buds.
First time visiting the bakery. The owner was very welcoming. We sampled 4 cakes and all of them were absolutely delicious. We will be stopping in again and trying more flavors.
Lovely place - female owner is extremely friendly, kind, and accommodating. The baked goods are sensationally delicious and affordable. If you're in the area and require any baked goods, this spot should be at the top of the list.

I ordered a custom cake for my organization (a religious publishing house). The cake was fantastic. I heard gasps and "wows" from the people who saw it when I rolled it in. And then they tasted it.
It was delicious. Each of the "books" was different was a different cake: chocolate, red velvet, and a vanilla/chocolate cake with mango mousse. The bakery staff was so helpful at every level.
Wow, by far the best cake we have ever had. I ordered a custom cake for my daughter's graduation day and not only was it beautifully done, but it was so good! I was going to take the leftovers to work but instead the 3 of us ate the cake all week and it was as good on day 6 as on day 1. Ordering and communicating in spite of social distancing was easy. Definitely found my new favorite bakery around here.
Had a custom made coco melon cake with the amazing Mona Lisa filling! I have to say this is the very first time all of our guests wanted cake to go!! We had nothing left! Hands down the best cake we ever had. I see a lot of baker’s focusing heavy on design but the taste is horrible. With cakes by Carlos you get best of both worlds. Thank you again!
I love this place! The cakes, design and customer service are the BEST!!! Not only are the cakes a work of Art, they are delicious!! I always order the chocolate and yellow cake combo with chocolate mousse filling. Once in a while, I’ll custard. I have ordered birthday cakes & custom cakes (Michael Jordan Jersey, a spaghetti pot, dancing skeletons for Halloween, fluffy dog) to name a few. The most recent cake was for a WILD ONE kid’s birthday party with hand sculpted animals. The cutest cake ever! I drove it all the way to Indiana for the party. They go out of their way to be helpful & they create something amazing every time. Can’t get service or designs like this at a grocery store or Costco. As they say....you get what you pay for 👍
I LOVE this bakery. Their cakes are delicious and gorgeous - whether whole or individual slices. The owner is a delight. She always remembers us and our prior orders. She offers excellent advice and consultation on what is achievable in various types of cakes/frostings/fondants/spun sugar, and the prices are fair for the custom artistry they deliver. I highly recommend them to anyone who wants a special and memorable cake for an event. I also love to drop in to browse the display case and pick up a treat on the weekend, or to get a hostess gift that wows.

Order the monalisa cake for thanksgiving and it was so good. I had two slices as well as guest and there is still more left. Very happy with my purchase and will be returning for other treats for special occasions.
