What’s not to like...you walk in to a smile and a hello. After that it just gets better. The pork rind Nachos are a work of art and possibly will be my meal going forward!!
The brisket, I’m a Texan and have smoked my own brisket for years and not a huge fan of anybody else’s, but this was amazing.the bark was crispy and not to spicy. The brisket had a perfect trim. Enough fat to add flavor but not a plate of skinny dry meat. Kudos to the pit master.
Fried okra was most likely frozen but who cares it did its purpose......
Now the sausage.....WE had the Garlic, cheese sausage and it makes me question my sausage preferences my whole life!! The decision to get a pound was perfect for the snacks later.
To top it all off having a beer outside in perfect weather as the crowd poured in saying hi and talking about the food reminds me of the best benefit of BBQ.....it brings people together, and left in this pit masters hands people will be coming together for a long time!!!
Finally made it Wing Wednesday. Some of the best wings I have ever had. They smoke the wings and then flash fry before tossing in your favorite sauce or dry rub. The smoke gives the meat layers of flavor you just don’t get anywhere else!!
