Rubio's Tucson

Love love LOVE Rubio's! What started as a Southern Californian surfer dude's business idea has transformed into some of the best Mexican "causal" food. He bought the recipe for the amazing fish tacos for a few bucks from a taco stand at one of his surfing spots in Baja Mexico and introduced the "fish taco" to California. From there, it has caught on like wild fire, and the menu has expanded to fresh grilled items, lobster tacos, burritos and more. The fish tacos are made with a delicate crispy beer batter, fresh shredded cabbage and a super delicious white sauce lovingly wrapped in a warm corn tortilla. Go crazy and spring for the "especiales" and add fresh guacamole for a few cents more. Heaven! Everything there is fresh and tasty and oh so good. I'm getting hungry thinking about it. Mouth watering, food fantasy mode. I've been to several different locations, (Orange County CA, Tucson AZ, Denver CO, etc.) and they are all consistently clean, well run, friendly and great food quality. Yes, I am hooked on Rubio's Fish Tacos and they even have a "Taco Tuesday" when the tacos are on sale. Please bring a Rubio's to Bellingham WA so I don't have to make an expedition of getting my Rubios fix!!! Don't make me beg you. Put it by the university, have a free taco day or something and Bellingham will be yours for the taking. PS Don't forget to try the lobster tacos washed down with an icy cold Corona or Modelo Especial. Squeeze some lime juice on there and belly up to the free salsa bar that is fresh made daily with lots of dif types of salsa and pico de gallo. If the weather's nice, sit outside under the palm shades and you'll swear you are sitting at the beach in Mexico. LOVE RUBIOS!!!!! :)

Rubio's food is fresh and flavors are nice. I specifically love the pinto beans, the chicken tacos and chicken burritos and all salsas are flavorful.

Good stuff... really good stuff... now I live fish tacos
