We were driving from Umbria to Rome for our return flight to the USA. Imagine my excitement when I saw the sign for a porchetta truck. We quickly exited the highway and knew we had found the right place. The tables were full of happy diners - even the local police had stopped for lunch. This is a road side food truck selling delicious pork sandwiches. What is Porchetta? It is no simple pork roast, but a savory, fatty, moist boneless pork roast stuffed with herbs, placed on a spit and very slowly roasted over a wood burning stove for many, many hours. Sounds good doesn’t it? You know it was. I asked for my sandwich to have mixed cuts of the pork – that way you get the best of both worlds – (fatty) crispy and (lean) tender pork pieces on a panino roll. I was in pig heaven for €3.50!
